At Ironbark Edgework & Axe Co. we offer premium knife, tool and scissor sharpening out of our private workshop in Quakers Hill, NSW, serving Greater Western Sydney. From kitchen knives and chef’s blades to garden tools and workshop gear, we bring tired edges back to clean, sharp and reliable. Axe restorations and resto-mod builds are our passion project, rolling out as a separate range soon.

Knife, Tool & Scissor Sharpening

Correct factory-style geometry or task-optimised re-profiling finished to a fine, polished edge. We work the edge the minimum amount required to get razor sharp results and maintain blade longevity, then strop with genuine kangaroo tail leather.

When re-profiling edges, the sharper the angle the less cutting resistance, the wider the angle the more material behind the edge for support.

Japanese knives doing ultra-fine work slice with much less resistance, but don’t hold an edge as long as thicker Western blades. Cleavers and heavy choppers run wider angles because they’re being hammered through bone and tough stuff – they need more support behind the edge.

For most work we recommend staying close to the original factory geometry if you like how it behaves – it’s the most predictable outcome. But if you want to experiment, we can measure your current edge and talk about re-profiling/shifting angles to suit how you actually use it.

Sharper for longer

We pay attention to the details – literally inspecting your edge under a microscope before, during and after our process. The finer the surface finish on the edge, the better its edge retention and the lower the risk of micro-cracks and stress risers.

Mild edge damage or small chip repairs are included in our standard price. No surprise extras – if a blade needs major repair to the edge, tip or re-profiling, we’ll confirm the cost and make sure we’re on the same page before we start, or you can send us photos first.

Small knives/Pairing under 15cm cutting edge length, Japanese or Western – $15 each

Knife Re-profiling or repair of badly chipped edges +$5-15 each on top of standard pricing

Chipped point repair +$10-30 each depending on severity, discussed and agreed upon before we start

Chisels – $15 each

Axes – $45 each

Axe Task Optimised Re-profiling - Straight/mixed use, Convex/splitting or Concave/chopping grinds – $60 each

Sharpen while you wait – $35 fee for urgent jobs, this covers your whole job whether it's a single knife or a whole roll, (subject to current workload, please confirm before arriving)

Precision Water Stone Sharpening

We don’t smash your knives across a dry grinder in the name of speed. Overheating ruins hardness, temper and edge retention, so we use a slower water-stone process coupled with precision jigs. This keeps the steel cool, lets us take more care, and prevents damage
